Black forest cake

Black Forest Cake inspired by my dad ♥⠀

I live 10.214 km away from my parents and miss them basically everyday all day long, even though we’re always talking. I thought it would be nice to start baking some things I know they love and have recipes to make once I go home to visit (coronavirus go away so I can go home in June 🤞🏼). ⠀

To start things off I made my dad’s favorite birthday cake 🎂. It’s Black Forest, although unlike the traditional German recipe that uses cherries I used a homemade berry jam to layer in between chocolate cake and vanilla whipped cream. I think dad would like it 💕. ⠀

Recipe: ⠀

•210 gr. flour ⠀
•40 gr. cocoa powder ⠀
•150 gr. brown sugar⠀
•90 gr. white sugar ⠀
•1 tsp. baking powder ⠀
•1/2 tsp. baking soda ⠀
•1 tbsp. Instant coffee⠀
•100 ml oil ⠀
•120 ml buttermilk⠀
•1 egg ⠀
•1 egg yolk ⠀
•1 tsp. Vanilla extract⠀
•3/4 tsp. salt ⠀
•120 ml hot water ⠀

Combine all your ingredients except for flour and water. Mix well. ⠀
Add in flour without over mixing your batter. ⠀
Add in hot water and mix again just until combined. ⠀
Pour into your cake tin and bake at 180 C for 25 to 30 min (or until cake is set in the middle). ⠀

To make your cooled cakes into into my version of Black Forest Cake: ⠀
layer your cake with berry jam (mine is a mix of “forest berries” and cream that has been whipped with 1 Tbsp of sugar and 1 tsp of vanilla. ⠀
