Serious question: is COVID-19 sponsored by banana bread? 🍌 ⠀

I saw someone wrote this on twitter and it made me laugh so I had to use it 😬.⠀

I decided it was time to make something a bit healthier because this quarantine is NOT making me any skinnier, and banana bread is pretty easy to make healthy. ⠀

Here’s the super simple recipe I used: ⠀

•3 ripe bananas (medium) ⠀
•2 cups oat flour (basically ground up oats)⠀
•2 large eggs ⠀
•1/4 cup maple syrup ⠀
•1 tsp baking soda ⠀
•1/2 tsp salt ⠀
•1 tsp vanilla ⠀
•Coconut sugar for topping ⠀

Mix everything together and pour into you baking tins. Top with coconut sugar before baking at 180C for 15 minutes or until set. ⠀
