Lemon cheesecake bars

🍋 lemon cheesecake cookie bars! ⠀

Ok so these may not be the prettiest cookie bars you ever did see BUT they are delicious! So I’m still going to share the recipe because if we’re being real not everything we make comes out looking amazing every single time, that doesn’t mean it can’t still be super tasty though. And it definitely hasn’t stopped me from snacking on these all week after work 🙃. ⠀

Just be sure to chill your bars before slicing and you should be fine! I skipped this step because my sweet tooth was being very impatient 🙂. ⠀

Recipe: ⠀

Cookie base – ⠀
•50 gr melted butter ⠀
•80 gr Brown sugar⠀
•20 gr white sugar ⠀
•1/8 tsp salt ⠀
•1 egg ⠀
•1/2 tsp vanilla ⠀
•125 gr flour ⠀
•1/2 tsp baking soda ⠀

Cheesecake topping – ⠀
•200 gr sweetened condensed milk ⠀
•65 gr cream cheese (room temp.)⠀
•Juice and zest of 1 lemon ⠀

1. Mix together all the ingredient for the cookie base and press into a square 8×8 baking tin. Bake at 180C/350F for 10 min. ⠀
2. Mix together all the ingredients from the cheesecake topping and pour over the cookie base. Put back into the oven and continue baking at the same temperature for 8 more minutes or until set in the center. ⠀
3. Cool completely and chill in the fridge for at least 1 hour before slicing and serving.
